i've learned how to cook a delicious leche flan..and i want to blog about it so that someday, when i forget how to do it, i'll just reread this post :) hahaha. i've researched about how to do the flan on the internet and did all of those things by myself. :))
okay, for the ingredients, we'll be needing:
egg yolks
evaporated milk
condensed milk
vanilla flavor
sugar :)) (for the caramel)
okay, first, the caramel...it's kinda tricky and i've not yet mastered a yummy caramel..but basically, you have to melt the sugar in a pan until it's already very sticky? like honey...lol. then, you pour it into the molding pan.
when i first made the caramel, the melting was easy...when i got back, IT HARDENED. lol. so, i reheated it and put water into it so that it wouldn't be that hard once the heat escaped..but you must be careful not to overcook the sugar since it would taste very bitter :))
then, you just have to mix the egg yolks, the evap milk and the condensed..one thing to remember when doing so is that the condensed > the evap...
i did not put the exact measurements because it's up to a person to discover the best proportions to be used for a superb flan :)) and yeah, don't forget a small amount of vanilla flavor.. :))
then, for the cooking, you have two options: one is for steaming, and the other one is baking..
i haven't tried yet the baking so i'd share with you my experience with the steaming..:))
after you've mixed all the ingredients (gently so that there wouldn't be any bubbles. lol), you pour it into the moulding pan...but you must not fill it. :)) then, you prepare the steamer...and steam it until it cooks...you must remember to never ever have a closed steaming..unless you want an ugly texture for your flan. ;)
my first flan took about THREE HOURS to cook. lol. or even more than that because i did not put any lid on..lol. my parents were quite mad at me for doing so. lol.
on the bright side, it was very very delicious and the texture is really perfect...very smooth, very yummy :))) the next batches that i made were a bummer because i couldn't perfect the texture...
i'll share the secret to a perfect texture without spending hours on steaming when i get it next time :))
you know it's cooked when you place a toothpick at the center and then you pull it and nothing clings to the toothpick..i mean, wala magsama ba..lol...
then, after that, you set it aside and let it cool..then, you could put it in the fridge before serving it :D
when you serve it, run a knife through the edges of the pan so that it'll be easier when you turn the pan upside down at the plate of course :) then, you could put a little bit more caramel if you want ;)
i've made quite a lot already and they're all yummy. yay! :))
but i still need a lot of improvements on my flan..
cheers. :)
